Abstract

DESCRIPTION OF GERM NUMBERS AND PERSONAL LEVEL OF HYGIENE SELLERS GREEN GRASS JELLY IN TABANAN MARKET ABSTRACT Green grass jelly is one of the traditional snacks that is currently still in great demand by most people. Green grass jelly processing must be done by applying personal hygiene from traders. The objectives of this study are to to know the bacteriological quality and determine the seller's personal hygiene level of green grass jelly sold in Tabanan Market. The research was conducted at the UPTD Center, Kerthi Bali Health Laboratory Center, Sadhajiwa, Bali Province. The sample size in this study was 30 samples with a sampling technique, namely Purposive Sampling. The ALT examination carried out found that all samples exceeded the standards based on SNI 7388 Year 2009 regulations. The results of the personal hygiene level characteristics obtained by 60% are categorized as Good and 40% are categorized as Less. The age obtained is 60% of the age category 40-50 years and 40% of the age category of 50-60 years. The level of education obtained is 60% from the category of junior high school education level and 40% from the category of elementary education level. So, it can be concluded that these three characteristics have an influence on the number of germs in a food and the presence of bad personal hygine actions is the main thing that makes the number of germs in food high during the sales process. Based on this, it is expected that jelly traders better maintain cleanliness in sales so that green jelly sold or distributed does not cause health problems. Keywords: Germ numbers, Personal hygiene. GAMBARAN ANGKA KUMAN DAN TINGKAT PERSONAL HYGIENE PENJUAL CINCAU HIJAU DI PASAR TABANAN ABSTRAK Cincau hijau merupakan salah satu minuman jajanan tradisional yang saat ini masih banyak diminati oleh sebagian besar masyarakat. Proses pengolahan cincau hijau harus dilakukan dengan menerapkan personal hygiene dari pedagang. Tujuan penelitian ini adalah untuk mengetahui kualitas bakteriologis dan tingkat personal hygiene penjual cincau hijau di Pasar Tabanan. Penelitian dilakukan di Balai UPTD Balai Laboratorium Kesehatan Kerthi Bali Sadhajiwa Provinsi Bali. Besar sampel pada penelitian ini yaitu 30 sampel dengan teknik pengambilan sampel yaitu Purposive Sampling. Pemeriksaan ALT yang dilakukan didapatkan seluruh sampel melebihi standar berdasarkan peraturan SNI 7388 Tahun 2009. Hasil karakteristik tingkat personal hygiene yang didapatkan sebesar 60% dikategorikan Baik dan 40% dikategorikan Kurang. Usia yang didapatkan sebesar 60% dari kategori usia 40-50 tahun dan 40% dari kategori usia 50-60 tahun. Tingkat pendidikan didapatkan sebesar 60% dari kategori tingkat pendidikan SMP dan 40% dari kategori tingkat pendidikan SD. Jadi dapat disimpulkan bahwa ketiga karakteristik memiliki pengaruh terhadap angka kuman dalam suatu makanan dan adanya tindakan personal hygine yang buruk menjadi hal utama yang membuat angka kuman dalam makanan menjadi tinggi pada saat proses penjualan. Berdasarkan hal tersebut, diharapkan kepada pedagang cincau agar lebih menjaga kebersihan dalam penjualan agar cincau hijau yang dijual ataupun didistribusikan tidak menimbulkan masalah kesehatan.
