Abstract

Hospital food service aims to provide quality food according to nutritional needs, safe, and acceptable to consumers in order to achieve optimal nutritional status. To determine the intake of nutrients in patients can be done by finding food scraps. Food waste is the volume or percentage of food that is not consumed and disposed of as waste that can be used to measure the effectiveness of the menu. The purpose of this study was to determine whether there was a relationship between taste and food waste in hospitalized patients at Buleleng General Hospital. This study was used correlative study with a cross-sectional observational study design. The research was conducted at the Buleleng General Hospital.on May 2021. The sample of this study was 36 patients, and met the inclusion criteria, namely patients aged over 18 years, getting a regular diet, while the exclusion criteria were patients who were treated in the children's room, delivery room and covid room. Food waste was measured using a scale, while taste was measured using a questionnaire. The data obtained were processed using the Spearman correlation test. The frequency distribution showed that most of the patients were in the age range of 56-65 years as many as 9 people (25%). Gender in this study were mostly male as many as 21 people (58.3%). Education of patients mostly have elementary education as many as 17 people (47.2%). Most of the patients did not work as many as 14 people (38.9%). Most of the respondents are in the category of leftovers with a lot of 23 people (63.9%). The average plate waste is 24.31%. Most of the respondents were in the category of good food taste of 31 people (86.1%). After the Spearman test, the p value = 0.238. There is no relationship between food waste and the taste of the patient's usual food at the Buleleng General Hospital. Keywords: food waste, food taste, regular food diet
