Abstract
ABSTRACT The basic principles of food handler hygiene and sanitation in hospital nutrition installations are basically no different from other food delivery places. The principles consist of several, among other things, planning foodstuffs, storing foodstuffs, processing food, transporting food, and serving food. Hygiene procedures are clean practices to prevent contamination of the food handled. The purpose of writing this thesis is to determine the relationship between the level of education and knowledge of sanitation hygiene with the hygiene behavior of food handlers in the hospital. This thesis is a scientific writing using a literature study approach. The research subjects in the literature review were food handlers at the hospital. The number of literature studied was 10 journals. Literature search is carried out through a database (Google Scholar). The results of researching the 10 literature journals found that the education level of food handlers was mostly high school / vocational school with a range of 45.5% - 86%. Based on the level of knowledge, it is said that high / good knowledge is in the range of 60% - 100% and low / insufficient knowledge is in the range of 21% - 39.1%, based on good behavior in the range of 10.5% - 100% and has bad / bad behavior in the range of 47.4% - 100%. From 2 journals that discuss the level of education of food handlers on hygiene behavior, it is produced that there is no relationship between the level of education and the hygiene behavior of food handlers, it is also said that the level of education does not have an important role in determining a person's hygiene behavior, from 5 journals or research results that discuss relationship levels. knowledge with hygiene behavior resulted that there was no relationship between the level of knowledge of food handlers and hygiene behavior Key words: level of education, level of knowledge and hygiene behavior
