Abstract

ABSTRACT Food and drink are very important things, food circulation must always comply with applicable health requirements. The aim of this research is to determine the relationship between food handlers' knowledge and attitudes about borax and the presence of borax in meatballs in the work area of UPTD Puskesmas I South Denpasar in 2024. This type of research is an analytical survey. The population in this study were 62 resident meatball traders. The data collected in this research is primary and secondary data. Data collection was carried out using questionnaire sheets and sampling to check the presence of borax. The data collected is processed and presented in tabular form. The average results from assessing the knowledge and attitudes of food handlers are in the good category. The results of the examination for the presence of borax carried out in the laboratory on 62 samples of meatball balls showed that 3 samples were positive for the presence of borax and 59 samples were negative for the presence of borax. From the results of bivariate analysis using the Chi-square test, the result was P = 0.000 at α = 0.05, then to determine the magnitude of the relationship between variables, the Contingency Coefficient (CC) calculation was carried out, the correlation coefficient interpretation result was 0.545 (medium). So there is a relationship between the knowledge and attitudes of food handlers about borax with the presence of moderate levels of borax. It is hoped that local health centers can monitor and evaluate education about the dangers of borax. Keywords: Knowledge, Attitude, Existence of Borax ABSTRAK Makanan dan minuman merupakanisuatu hal yang sangat penting, peredaran pangan harus selalu sesuai dengan syarat kesehatan yang berlaku. Tujuan penelitian ini adalah untuk mengetahui hubungan pengetahuan dan sikap penjamah makanan tentang boraks dengan keberadaan boraks pada bakso di wilayah kerja UPTD Puskesmas I Denpasar Selatan Tahun 2024. Jenis penelitian ini adalah survei analitik. Populasi dalam penelitian ini adalah 62 pedagang bakso yang menetap. Data yang dikumpulkan dalam penelitian ini adalah data primer dan sekunder. Pengumpulan data dilakukan menggunakan lembar kuesioner dan pengambilan sampel untuk melakukan pemeriksaan keberadaan boraks. Data yang dikumpulkan diolah dan disajikan dalam bentuk tabel. Hasil rata-rata dari penilaian pengetahuan dan sikap penjamah makanan masuk dalam kategori baik. Hasil pemeriksaan keberadaan boraks dilakukan di laboratorium terhadap 62 sampel pentol bakso didapatkan hasil 3 sampel positif keberadaan boraks dan 59 sampel negatif keberadaan boraks. Dari hasil analisis bivariate menggunakan uji Chi-square didapatkan hasil P = 0,000 pada α = 0,05, selanjutnya untuk mengetahui besar hubungan antar variabel dilakukan perhitungan Coefficient Contingency (CC) didapatkan hasil interpretasi koefisien kolerasi 0,545 (sedang). Jadi adanya hubungan pengetahuan dan sikap penjamah makanan tentang boraks dengan keberadaan boraks dengan tingkat sedang. Diharapkan kepada pihak puskesmas setempat dapat melakukan pemantauan dan mengevaluasi penyuluhan tentang bahaya boraks. Kata Kunci : Pengetahuan, Sikap, Keberadaan Boraks.
