Abstract

DESCRIPTION OF TOTAL PLATE NUMBERS ON HAND SWABS OF BALINESE CULINARY FOOD TRADERS AT KRENENG DANGIN PURI KANGIN MARKET, NORTH DENPASAR DISTRICT, BALI ABSTRACT The number of colonies of aerobic mesophyll bacteria found in each gram or milliliter of the test sample is known as the “bacterial number”. Various elements, including kitchen equipment, food handling surfaces, food storage facilities, and food handling hygiene, may contribute to the occurrence of foodborne infections. The presence of bacterial growth after inoculation of a sample at the correct temperature is the fundamental idea behind total plate number testing. Finding out how many plates a typical Balinese culinary seller has at Kreneng Dangin Puri Kangin Market in Denpasar Regency, North Bali, is the main objective of this research. Descriptive research and purposive sampling were used in this research. Data from 33 respondents was collected at the Panureksa Utama Laboratory between January and March 2024. The cup counting method was the research methodology used. The results of this study show that the characteristics based on age are mostly 31-40 years old, namely 15 people (45.5%), based on gender, the majority are male, 19 people (57.6%), based on education. Lastly, most of them had high school education, namely 24 people (72.7%), based on hand washing behavior, the majority had good behavior, namely 22 people (66.7%). Conclusion: based on the results of the ALT examination, the majority of ALTs were in the category that met the standards, namely 22 people or (66.7%). Key words: total plate number, hand swab GAMBARAN ANGKA LEMPENG TOTAL PADA SWAB TANGAN PEDAGANG MAKANAN KULINER KHAS BALI DI PASAR KRENENG DANGIN PURI KANGIN KECAMATAN DENPASAR UTARA BALI ABSTRAK Jumlah koloni bakteri mesofil aerobik yang ditemukan dalam setiap gram atau mililiter sampel uji dikenal sebagai “bilangan bakteri”. Berbagai elemen, termasuk peralatan dapur, permukaan penanganan makanan, fasilitas penyimpanan makanan, dan kebersihan penanganan makanan, mungkin berkontribusi terhadap terjadinya infeksi bawaan makanan. Keberadaan pertumbuhan bakteri setelah inokulasi sampel pada suhu yang tepat merupakan ide mendasar di balik pengujian nomor pelat total. Mencari tahu berapa jumlah piring yang dimiliki penjual kuliner khas Bali di Pasar Kreneng Dangin Puri Kangin di Kabupaten Denpasar, Bali Utara, menjadi tujuan utama penelitian ini. Penelitian deskriptif dan purposive sampling diterapkan dipenelitian ini. Data 33 responden dikumpulkan di Laboratorium Panureksa Utama antara bulan Januari hingga Maret 2024. Metode penghitungan cangkir merupakan metodologi penelitian yang diterapkan. Hasil dari penelitian ini menunjukkan bahwasanya karakteristik didasarkan atas umur sebagian besar berumur 31-40 tahun yakni sejumlah 15 orang (45,5%), didasarkan atas jenis kelamin sebagian besar yang berjenis kelamin laki-laki sejumlah 19 orang (57,6%), didasarkan atas pendidikan terakhir sebagian besar berpendidian SMA yakni sejumlah 24 orang (72,7%), didasarkan atas perilaku cuci tangan sebagian besar yang berperilaku baik yakni sejumlah 22 orang (66,7%). Kesimpulan : didasarkan atas hasil pemeriksaan ALT sebagian besar ALT berada di kategori memenuhi standar yakni sejumlah 22 orang atau sebesar (66,7%). Kata kunci : angka lempeng total, swab tangan
