Abstract

EVALUATION OF THE MENU BASED ON ADEQUATE MACRO NUTRITIONAL CONSUMPTION AND NUTRITIONAL STATUS OF PEOPLE WITH DISABILITY AT CAHAYA MUTIARA FOUNDATION UBUD ABSTRACT Food consumption is one of the factors that affect a person's nutritional status. The purpose of this study was to describe the consumption of macronutrients and the nutritional status of persons with disabilities at the Cahaya Mutiara Ubud Foundation. The type of research used was observational with a cross sectional research design, and subjects were taken using a total population of 17 subjects. The types of data collected were subject identity data by interview and using an identity formula, consumption data using a 24-hour recall form and nutritional status data by taking anthropometric measurements, while the general description of the Cahaya Mutiara Ubud Foundation was obtained from notes related to the required data. The results showed that the evaluation of the consumption of macronutrients from the subject in the form of energy in the category of severe deficit category was 16 people with a percentage (94.12%), protein consumption in the category of severe deficit category was 2 people with a percentage (11.76%), Fat consumption in the subject was the most in the severe deficit category as many as 15 people with a percentage (88.24%), carbohydrate consumption in the subject was the most in the severe deficit category as many as 17 people with a percentage (100%). Nutritional status according to BMI with a normal category as many as 13 people (76%), nutritional status in the obese category as many as 2 people (12%), and subjects with nutritional status in the obesity category as many as 2 people (12%).
