Abstract

THE CORELATION PERCEPTION OF FLAVOR AND SOFT FOOD WASTED OF THE PATIENTS IN WANGAYA HOSPITAL, DENPASAR CITY ABSTRACT Food wasted showed that food is not optimal, so the wasteds awas indicator that can be used to evaluate the success of hospital nutrition services. The purpose of this study was to Analyze the correlation between perception of flavor and soft food wasted patients in Wangaya Hospital Denpasar City. This study was an observational study with a cross-sectional design. The location of the study was conducted at Wangaya Hospital in Denpasar City. Data collection used quesionare for wasted food and perception of flavour to 62 samples. Based on the results of this study, it was found that the wasted food of patients who had been obtained using the Comstock method which was then processed, and obtained results from 62 samples studied that the wasted food of many classified patients was 42 people (67,7%), total wasted food at Wangaya Hositpal was 39,45% . The results of the research that have been carried out show that of the 42 samples that were classified as large. Then from 20 samples which left little food, 14 people (70%) stated that the food taste was good and 6 people (30%) stated that the food taste was not good. After Chi Square testing, the value of p = 0.149, which means there is no significant relationship between perception of flavor and the wasted food. The researcher suggested that the nutrition installation of the Hospital regularly evaluates food wasted and varied the food menu Keywords: Perception Flavor, Food wasted, Soft Food, Hospital HUBUNGAN PERSEPSI CITA RASA DENGAN SISA MAKANAN LUNAK PASIEN DI RSUD WANGAYA KOTA DENPASAR ABSTRAK Sisa makanan merupakan salah satu indikator yang sederhana yang dapat digunakan untuk mengevaluasi keberhasilan pelayanan gizi rumah sakit. Tujuan penelitian ini untuk menganalisis hubungan persepsi cita rasa dengan sisa makanan lunak pasien di RSUD Wangaya Kota Denpasar. Penelitian ini merupakan penelitian observasional dengan rancangan cross-sectional. Lokasi penelitian dilaksanakan di RSUD Wangaya Kota Denpasar. Cara pengumpulan data dilakukan dengan pengukuran persepsi cita rasa dan sisa makanan menggunakan kuesioner terhadap 62 sampel. Berdasarkan hasil penelitian ini diketahui sisa makanan pasien didapat dengan menggunakan metode Comstock yang kemudian diolah dan didapatkan hasil dari 62 sampel yang diteliti bahwa sisa makanan pasien yang tergolong banyak sebanyak 42 orang (67,7%), Sisa makanan lunak pasien di RSUD Wangaya sebesar 39,45%. Hasil penelitian yang telah dilakukan menunjukkan bahwa dari 42 sampel yang sisa makanan tergolong banyak didapatkan 22 orang (52,4%) menyatakan persepsi cita rasa makanan baik dan 20 orang (47,6%) menyatakan cita rasa makanan kurang baik. Kemudian dari 20 sampel yang sisa makanan tergolong sedikit, 14 orang (70%) menyatakan persepsi cita rasa makanan baik dan 6 orang (30%) menyatakan persepsi citarasa makanan kurang baik. Setelah dilakukan uji Chi Square, didapatkan nilai p = 0,149 artinya tidak ada hubungan persepsi signifikan antara persepsi cita rasa makanan dengan sisa makanan. Peneliti menyarankan agar instalasi gizi Rumah Sakit melakukan evaluasi sisa makanan secara rutin serta memvariasikan menu makanan Kata Kunci: Persepsi Cita Rasa, Sisa Makanan, Makanan Lunak, Rumah Sakit
