Abstract
Quality food is food that is selected, prepared and served in such a way that its nutritional value is maintained. The purpose of this study was to determine the difference in food safety scores of food stalls based on the type of food in Pering Village, Blahbatuh, Gianyar. The characteristics of the sample and respondents obtained are 20 food stalls. The statistical test used the Independent T-Test test. Types of food sold can be categorized as mixed rice as many as 8 food stalls (40%), pork lawar as many as 4 food stalls (20%), satay lilit as much as 2 food stalls (10%), fresh vegetables as much as 3 food stalls (15%) and meatballs as many as 3 food stalls (10%). Based on the length of time selling, it is categorized as 1-10 years selling 10 food stalls (50%), 11-20 years as many as 5 food stalls (25%) and 21-50 years as many as 5 food stalls (25%). Based on the number of workers, it can be categorized as having no workforce as many as 12 food stalls (60%), having 1 worker as many as 6 food stalls (30%) and having 2 workers as many as 2 food stalls (10%). Based on the place of food processing, the processing area is categorized as 14 food stalls in the kitchen (70%), behind the stall there are 4 food stalls (20%) and next to the stall there are 2 food stalls (10%). The average food safety score obtained is (77.6%) in the vulnerable but safe category. The food safety score was significantly different from the standard (p-value < 0.05).
