Abstract

RISK LEVEL OF FOOD CONTAMINATION IN PADANG RESTAURANTS IN THE NORTH DENPASAR SUB-DISTRICT AREA YEAR 2024 ABSTRACK Food is a basic human need, while the rules of food management must be considered in order to obtain food that meets the principles of health, cleanliness, and hygiene. Activities using the observation method to determine the level of risk of food contamination in Padang restaurants in North Denpasar District, with data analysis techniques and determination of low, medium, high categories. The results with a high level of risk are in the food handler variable with the results of a percentage of 94% of restaurants that do not meet the requirements, and in the food processing place variable with the results of 78% of restaurants that do not meet the requirements, which means that they still have sanitation problems in both variables in Padang restaurants in North Denpasar District. It is recommended for restaurant managers to pay more attention to the principles of food processing that meet the requirements in accordance with the Minister of Health Regulation No.14 of 2021 to reduce the risk level of contamination in food. Key words: food contamination risk level.   TINGKAT RISIKO KONTAMINASI MAKANAN DI RUMAH MAKAN PADANG WILAYAH KECAMATAN DENPASAR UTARA TAHUN 2024 ABSTRAK Makanan adalah kebutuhan dasar manusia, adapun kaidah-kaidah pengelolaan makanan harus diperhatikan agar diperoleh makanan yang memenuhi prinsip-prinsip kesehatan, kebersihan, dan higiene. Kegiatan menggunakan metode observasi untuk mengetahui tingkat risiko kontaminasi makanan di rumah makan padang wilayah Kecamatan Denpasar Utara, dengan teknik analisis data yang serta penentuan kategori rendah, sedang, tinggi. Hasil dengan tingkat risiko tinggi yaitu pada variabel penjamah pangan dengan hasil presentase 94% rumah makan yang tidak memenuhi syarat, dan pada variabel tempat pengolahan pangan dengan hasil 78% rumah makan yang tidak memenuhi syarat, yang artian masih mempunyai permalahan sanitasi dalam kedua variabel tersebut di rumah makan padang wilayah Kecamatan Denpasar Utara. Disarankan bagi pengelola rumah makan agar lebih memperhatikan dalam prinsip-prinsip pengolahan pangan yang memenuhi syarat sesuai dengan Peraturan Menteri Kesehatan No.14 Tahun 2021 untuk mengurangi tingkat risiko kontaminasi pada makanan.
