Abstract

IDENTIFICATION OF Escherichia coli BACTERIA IN RUJAK KUAH PINDANG AT KEROBOKAN VILLAGE OF NORTH KUTA ABSTRACT Bacground: Rujak kuah pindang in Kerobokan Village is favored by local people, domestic and foreign tourist. The way of serving rujak kuah pindang is still traditional. Contamination by microbes, one of which is Escherichia coli can occur if personal hygiene and sanitation of traders are not good. Purpose: this study aims to identify Escherichia coli bacteria in rujak kuah pindang and to describe the personal hygiene and sanitation of rujak kuah pindang traders in Kerobokan Village of North Kuta. Methods: This study uses descriptive research with laboratory examinations conducted at the Public Health Laboratory of Panureksa Utama Denpasar. Results: from 15 samples of rujak kuah pindang, 14 samples of rujak kuah pindang (93.3%) were negative for Escherichia coli and one sample of rujak kuah pindang (6.7%) was positive for Escherichia coli. Conclusion: there is one sample of rujak kuah pindang (6.7%) in Kerobokan Village of North Kuta was positive for Escherichia coli and still found traders whose personal hygiene and sanitation were not in accordance with Minister of Health Regulation No. 1096/MENKES/PER/VI/2011 concerning Food and Service Sanitation Hygiene. Keywords: Rujak kuah pindang, identification of Escherichia coli, microbial contamination IDENTIFIKASI BAKTERI Escherichia coli PADA RUJAK KUAH PINDANG DI KELURAHAN KEROBOKAN KECAMATAN KUTA UTARA ABSTRAK Latar Belakang: Rujak kuah pindang di Kelurahan Kerobokan digemari oleh masyarakat lokal, wisatawan domestik dan mancanegara. Cara penyajian rujak kuah pindang masih tradisional. Kontaminasi oleh mikroba salah satunya Escherichia coli dapat terjadi jika higiene perorangan dan sanitasi pedagang yang kurang baik. Tujuan: penelitian ini bertujuan untuk mengidentifikasi bakteri Escherichia coli pada rujak kuah pindang di Kelurahan Kerobokan Kecamatan Kuta Utara. Metode: Penelitian ini menggunakan penelitian deskriptif dengan pemeriksaan laboratorium yang dilakukan di Laboratorium Kesehatan Masyarakat Panureksa Utama Denpasar. Hasil: dari 15 sampel rujak kuah pindang didapatkan hasil sebanyak 14 sampel rujak kuah pindang (93,3%) negatif Escherichia coli dan satu sampel rujak kuah pindang (6,7%) positif Escherichia coli. Simpulan: terdapat satu sampel rujak kuah pindang (6,7%) di Kelurahan Kerobokan Kecamatan Kuta Utara positif Escherichia coli dan masih ditemukan pedagang yang higiene perorangan dan sanitasinya tidak sesuai dengan Permenkes No. 1096/MENKES/PER/VI/2011 tentang Higiene Sanitasi Jasaboga.
