Abstract

DESCRIPTION OF THE TOTAL PLATE COUNT ON TIPAT CANTOK SOLD IN SANUR VILLAGE DENPASAR ABSTRACT Sanur Village is a tourist area and there are traditional processed foods, one of them is tipat cantok. The processing process of cantok tipat is fairly simple because it does not pass the reheating stage before serving so it is susceptible to contamination with bacteria. This study was conducted to determine the description of the total plate number on tipat cantok sold in Sanur village Denpasar. This research is a descriptive study by examining the total plate numbers with pour plate method. Tipat cantok was taken by saturated sampling of 12 samples from 12 merchant. The highest total plate number value is 3 x 105 colonies/g, and the lowest is 1,9 x 104 colonies/g. Tipat cantok that fulfill the standards of PerBPOM RI No. 13 of 2019 as many as 11 samples (92%) and doesn’t fulfill the standards of 1 sample (8%). Based on the results of the reserch, it can be concluded that most of the tipat cantok do not fulfill health standards. Keywords: tipat cantok, Sanur, total plate count GAMBARAN ANGKA LEMPENG TOTAL PADA TIPAT CANTOK YANG DIJUAL DI KELURAHAN SANUR DENPASAR ABSTRAK Kelurahan Sanur merupakan daerah wisata dan terdapat makanan olahan tradisional yang salah satunya adalah tipat cantok. Proses pengolahan tipat cantok terbilang sangat sederhana karena tidak melewati tahap pemanasan kembali sebelum disajikan sehingga rentan terkontaminasi bakteri. Penelitian ini dilakukan untuk mengetahui gambaran angka lempeng total pada tipat cantok yang dijual di kelurahan Sanur Denpasar. Penelitian ini merupakan penelitian deskriptif dengan pemeriksaan angka lempeng total metode pour plate. Sampel tipat cantok diambil secara sampling jenuh sebanyak 12 sampel dari 12 pedagang. Nilai angka lempeng total tertinggi yaitu 3 x 105 koloni/g, dan yang terendah yaitu 1,9 x 104 koloni/g. Tipat cantok yang memenuhi standar PerBPOM RI No. 13 Tahun 2019 sebanyak 11 sampel (92%) dan tidak memenuhi standar sebanyak 1 sampel (8%). Berdasarkan hasil penelitian tipat cantok yang dijual di Kelurahan Sanur, dapat disimpulkan bahwa sebagian besar tipat cantok tidak memenuhi standar kesehatan.
