Abstract

The punctuality of serving food to patients is the accuracy of the patient receiving food according to the schedule determined by the hospital. Portion accuracy is the percentage ratio of ready to eat portions to portions in the distribution unit. The food waste is the food that isn’t consumed and disposed of as waste. The purpose of this study was to describe the relationship between serving punctuality and portion accuracy with the patient’s leftover meals in the hospital based on a literature study. This research is a literature study with a literature review design in May 2021. Types of data can be in the form of : a) the thoughts b) research results, both unpublished and published. The results of the literature review are : (1) the punctuality of presentation, namely as many as 3 journals have a percentage of 57,1 % - 80 % done in a timely manner. This has not been met with the hospital’s minimum service standard (SPM), which is 90 %. So that the punctuality of the presentation has not been carried out in a timely manner, (2) the accuracy of the portion that is as many as 7 journals is not carried out properly. Most of the portion inaccuracies in vagetables as much as 66,7 %, steamed rice as much as 55,6 %, puree as much as 72 %, filtered puree as much as 92 % and animal side dishes (fish + 15,27 %, meat balls + 13,55 % and milksfish + 11,8 %, (3) The rest of the patient’s meal in the hospital, namely 1 journal had a percentage ≤ 20 % and as many as 3 journals had a percentage > 20 %. So that most of them have not met minimum service standards (SPM) in the hospitals, (4) there are correlation between the punctuality of serving and the rest of the patient’s meal at the hospital, (5) there are no correlation between the accuracy of the serving portion and the rest of the patient’s meal in the hospital.
