Abstract

Differences of the Food Waste based on the Level of Satisfaction of Inpatients at the Hospital ABSTRACT Food waste is the volume or percentage of food that is not consumed and disposed of as waste and can be used to measure the effectiveness of the menu. The percentage of food waste is calculated by comparing the food waste with the standard hospital food portions multiplied by 100%. Patient satisfaction is a feeling of pleasure or satisfaction that the product or service received has met or exceeds expectations. This study aims to determine the differences in food waste based on the satisfaction level of inpatients at the hospital. The method used is the literature review method by searching, reading, and sorting research studies and library materials that contain theories that are relevant to the research being carried out. Literature analysis is carried out by summarizing the results of research in journals and theses that are relevant to the issues discussed. The results of the literature reviewe journals research showed that the average food waste for patients based on meal time was ≥20% for staple foods as much as 37,22%, vegetable side dishes as much as 38,26%, animal side dishes as much as 29,30%, and vegetables as much as 38,32%. Inpatient satisfaction level score in the satisfied category was 58% and not satisfied was 42%. The results of statistical tests from 6 journals that analyzed the relation between satisfaction levels and food waste found three journals that stated a significant relations with p-value <0.05 and three journals that stated there was no significant relations with p-value >0.05.
