Abstract

OVERVIEW OF TOTAL PLATE COUNT AND Escherichia coli ON THE HAND OF FOOD HANDLER AT TANAH LOT TOURIST ATTRACTION KEDIRI TABANAN BALI ABSTRACT Food safety in tourist areas is an important aspect in protecting the health of visitors. One of the factors influencing food safety is hand hygiene of food handlers. Total Plate Count is used to determine the total of bacteria, while identification of Escherichia coli is used as an indicator of fecal contamination. This study aimed to describe the Total Plate Count and Escherichia coli on the hands of food handlers at Tanah Lot Tourism Attraction, Kediri, Tabanan, Bali. Type of this research is descriptive. There were 30 samples examined. Samples were collected by purposive sampling technique. The Total Plate Count test using pour plate method, while the identification of Escherichia coli using biochemical tests and TSIA. The results, in Total Plate Count test, 25 samples (83.33%) in required standards, while 5 (16,67%) samples not in required standards. In the identification of Escherichia coli, 28 samples (93.33%) were not detected, while 2 samples (6.67%) were detected Escherichia coli. It can be concluded that the hand hygiene of food handlers at Tanah Lot Tourism Attraction is generally adequate; however, improvements in hygiene practices are still needed because some samples not in required standards and Escherichia coli contamination was still detected. Keywords: TPC; food handlers; Escherichia coli GAMBARAN ANGKA LEMPENG TOTAL DAN Escherichia coli PADA TANGAN PENJAMAH MAKANAN DI DAYA TARIK WISATA (DTW) TANAH LOT KEDIRI TABANAN BALI ABSTRAK Keamanan pangan di kawasan wisata merupakan aspek penting dalam melindungi kesehatan wisatawan. Salah satu faktor yang berperan dalam keamanan pangan yaitu kebersihan tangan penjamah makanan. Pemeriksaan Angka Lempeng Total digunakan untuk menentukan jumlah bakteri sedangkan identifikasi Escherichia coli digunakan sebagai indikator kontaminasi fekal. Penelitian ini bertujuan untuk menggambarkan Angka Lempeng Total dan keberadaan Escherichia coli pada tangan penjamah makanan di Daya Tarik Wisata (DTW) Tanah Lot, Kediri, Tabanan, Bali. Jenis penelitian ini yaitu penelitian deskriptif. Jumlah sampel yang diteliti sebanyak 30 sampel. Sampel dikumpulkan menggunakan teknik purposive sampling. Pemeriksaan Angka Lempeng Total dilakukan menggunakan metode pour plate, sedangkan identifikasi Escherichia coli dilakukan menggunakan metode uji biokimia dan TSIA. Hasil penelitian ini yaitu pada pemeriksaan Angka Lempeng Total, terdapat 25 (83,33%) sampel yang memenuhi syarat dan 5 (16,67%) sampel tidak memenuhi syarat. Sedangkan pada identifikasi Escherichia coli, terdapat 28 (93,33%) sampel tidak terdeteksi keberadaan Escherichia coli dan 2 (6,67%) sampel terdeteksi keberadaan Escherichia coli. Sehingga dapat disimpulkan bahwa kebersihan tangan penjamah makanan di DTW Tanah Lot secara umum telah memenuhi syarat, namun masih diperlukannya peningkatan hygiene karena masih terdapat penjamah makanan yang tidak memenuhi syarat dan terdeteksi keberadaan Escherichia coli pada tangan penjamah makanan.
