Abstract
The benchmark for the success of organizing food is that the food served is acceptable and the food is consumed without leaving any food residue. The rest of the patient's food can describe the effectiveness, efficiency of hospital nutrition installation services and acceptability of patients. The problem with nutrition services in hospitals that often occurs is the large amount of leftover food for inpatients, which means that the purpose of nutrition services is not quite right. Therefore it is necessary to measure the remaining food served. One of the factors that affect the patient's leftover food is the patient's knowledge of the food or diet consumed. This study aims to determine the relationship between the level of knowledge about a low-salt diet and food waste at Sanjiwani Hospital, Gianyar. This type of research is observational with a cross sectional approach. The number of samples is 43 people and the data is collected by questionnaire. The results showed that the sample had a good knowledge level of 46.5%. The average food waste in low-salt diet patients was 19.69%, which was included in the little category. The test results obtained p value = 0.00 (p <0.05) it was concluded that there was a relationship between the level of knowledge about a low salt diet and food waste.
