Abstract
Pork lawar plek is a traditional Balinese dish that is highly susceptible to microbiological contamination because it contains fresh blood and is served without further cooking. This study aimed to analyze the relationship between the Food Safety Score (FSS) and its components and the microbiological quality of pork lawar plek sold in the Sukawati tourism area, Gianyar Regency. This analytical observational study employed a cross-sectional design involving 16 vendors selected using the total sampling technique. Food Safety Score data were collected through direct observation using a standardized assessment form, while microbiological quality was determined by Total Plate Count (TPC), Escherichia coli, and Salmonella sp. examinations. Data were analyzed using univariate analysis and Kendall's Tau correlation test. The results showed that all samples (100%) exceeded the TPC standard, six samples (37.5%) failed to meet the Escherichia coli standard, and all samples (100%) were negative for Salmonella spp. A total of 87.5% of vendors were categorized as vulnerable but safe for consumption. Kendall's Tau analysis indicated that the overall Food Safety Score was not significantly associated with Escherichia coli contamination (p=0.157), whereas food handler hygiene (p=0.017) and food distribution or serving practices (p=0.005) were significantly associated. It was concluded that these practices influenced the microbiological quality of pork lawar plek.
