Abstract

TOTAL PLATE COUNT AND IDENTIFICATION Salmonella species ON BABY SATE IN THE SANGEH TOURISM AREA, BADUNG BALI REGENCY ABSTRACT Background: One of the characteristics of culinary tourism in Bali, namely pork satay. Food safety is influenced by the process of providing food, namely personal hygiene and unsanitary environmental sanitation which can lead to contamination of pork satay. Purpose: This study was conducted to determine the total plate count and identification Salmonella sp. on pork satay. Method: This research uses descriptive research with saturation sampling technique. The samples used were 10 samples obtained through observation and examination of the total plate count and identification of Salmonella sp. bacteria. The examination was carried out at the Panureksa Utama Laboratory. Results: Based on the total plate count research, 7 samples (70%) did not meet the requirements based on the standards in BPOM Regulation No. 13 of 2019. And there was 1 sample identified as Salmonella sp.. Conclusion: In pork satay there are still ALT results that do not meet the standard so that. personal hygiene and sanitation of traders need to be improved. Keywords: pork satay, total plate number, Salmonella sp.,Sangeh ANGKA LEMPENG TOTAL DAN IDENTIFIKASI Salmonella species PADA SATE BABI DI KAWASAN WISATA SANGEH KABUPATEN BADUNG BALI ABSTRAK Latar belakang: Salah satu ciri khas wisata kuliner di Bali, yaitu Sate Babi. Keamanan pangan dipengaruhi dari proses penyelenggaraan makanan yaitu personal hygiene dan sanitasi lingkungan yang kurang bersih dapat menyebabkan terjadinya kontaminasi pada sate babi. Tujuan: Penelitian ini dilakukan untuk mengetahui angka lempeng total dan mengidentifikasi bakteri Salmonella sp. pada sate babi. Metode: Penelitian ini menggunakan penelitian deskriptif dengan teknik pengambilan sampel saturation sampling/sampel jenuh. Sampel yang digunakan 10 sampel yang diperoleh melalui observasi dan pemeriksaan angka lempeng total dan identifikasi bakteri Salmonella sp.. Pemeriksaan dilakukan di Laboratorium Panureksa Utama. Hasil: Berdasarkan penelitian angka lempeng total didapatkan 7 sampel (70%) tidak memenuhi syarat berdasarkan standar pada Peraturan BPOM No.13 Tahun 2019. Dan terdapat 1 sampel yang teridentifikasi Salmonella sp.. Simpulan: Pada sate babi masih terdapat hasil ALT yang belum memenuhi standar sehingga. personal hygiene dan sanitasi pedagang perlu ditingkatan.
