Abstract

TOURISTS ACCEPTANCE OF TRADITIONAL BALINESE FOOD OF BABI GULING AND ITS DERIVATIES ABSTRACT Traditional Balinese food is one of the tourist attractions. The traditional Balinese food restaurant babi guling and its derivatives are very popular. Many tourists visit to enjoy the traditional Balinese food of babi guling and its derivatives. The purpose of this study was to determine the acceptance of tourists to the traditional Balinese food of babi guling and its derivatives and the nutritional value of the traditional Balinese food of babi guling and its derivatives. Data were collected using a systematic study of 9 literature. Food acceptance data based on taste, aroma, texture, color, and food presentation. The results showed higest of tourist acceptance of traditional Balinese food of babi guling and its derivaties based on taste was 76,25% very like it, the smell are good was 62,22% and the score was 3.74, the texture are good was score 3.74, the color 53.3% was very like it, the presentation 76,25% is very good. Traditional Balinese food of babi guling and its derivatives has varied nutritional amounts of protein, fat and carbohydrates. The traditional Balinese food of babi guling and its derivatives in 100g of food weight contains nutritional value with a protein range of 7.64-25.66 g, fat 9.21-35.48 g, carbohydrates 1.83-6.57 g. The traditional Balinese food of babi guling and its derivatives in portion contains nutritional value with a protein range of 25-41.9 g, fat 22.6-50 g, 25-46.5 g.
