Abstract
THE EFFECT OF ADDITIONAL DIFFERENT JUICE ON THE CHARACTERISTICS OF JELLY CANDY ALOE VERA ABSTRACT Jelly candy is a soft-textured confectionery processed with the addition of a hydrocolloid component to modify the texture to produce a chewy product (SNI 3547.2-2008). In this study,the addition of different fruit juices was used to determine the effect of the ingredients on the characteristics of the aloe vera jelly candy. This research is an experimental study by conducting a randomized block design (RBD) experiment with 5 types of treatment,each treatment consisting of 3 replications,so this research was conducted with 15 experimental units. The treatment carried out by adding different fruit juices to jelly candy was the addition of 5% fruit juice (lime,pineapple,strawberry,mango,apple) from aloe vera juice. The organoleptic test results showed that the addition of different fruit juices had a significant effect on color,aroma,taste,texture,overall acceptance,texture quality and taste quality. In chemical analysis,water content,ash content,and reducing sugar had no effect, but on vitamin C levels, it had a significant. The addition of apple cider showed a water content of 66,83%, an ash content of 0,18%bb, a vitamin C content of 101,04mg/100g, and a reducing sugar of 22,17%.
