Abstract

DESCRIPTION OF TOTAL PLATE COUNT ON LOLOH CEMCEM PLEASE STORED IN ROOM TEMPERATURE AND REFRIGERATION WITH DIFFERENCES OF STORAGE TIME PRODUCE IN PENGLIPURAN VILLAGE ABSTRACT Background: Traditional drinks that are commonly consumed by people in Bali are loloh, one of which is loloh cemcem. It must be tested by BPOM safety and quality if it will be distributed and consumed. But there are still manufacturers who don't do that. This research was conducted to determine the shelf life of "Men Nyampuh" calamity in Penglipuran Village. Method: The parameters analyzed were the test of the total plate count using PCA on loloh cemcem. This study used a descriptive study with a laboratory examination conducted at the Bacteriology Laboratory, Department of Technology, Medical Laboratory of the Poltekkes Denpasar. The sample size in this study is 6 bottles in one producer, namely "Men Nyampuh" with a sampling technique that is simple random sampling. Result :TPC examination carried out obtained TPC values that exceeded the limit of microbial contamination at the time of storage to 48 hours at room temperature (25 - 32 ° C) that is, 1.2 x 106 colonies / ml was unable to meet the requirements and exceeded the limit of contamination microbes on BPOM standard No 13 of 2019 which is 106 colonies / ml. In the coolant temperature (1-4 ° C), the value of TPC in loloh cemcem stored for 96 hours still fulfills the requirements of 1.6 x 105 , but at the 96 hours the TPC value of the spoon loloh is almost close to the standard value of BPOM No. 13 of 2019. Concluion: The storage time of the loloh cemcem stored at room temperature is 1 day and the cooling temperature is 4 days. Manufacturers of loloh cemcem are expected to maintain quality and include expired dates on their products. Keywords: loloh cemcem, total plate count, temperature, penglipuran village GAMBARAN ANGKA LEMPENG TOTAL PADA LOLOH CEMCEM YANG DISIMPAN PADA SUHU RUANGAN DAN PENDINGIN DENGAN PERBEDAAN WAKTU PENYIMPANAN YANG DIPRODUKSI DI DESA PENGLIPURAN ABSTRAK Latar belakang: Minuman tradisional yang umum dikonsumsi masyarakat di Bali adalah loloh salah satunya adalah loloh cemcem. Loloh cemcem harus melalui uji keamanan dan kualitas BPOM jika akan didistribusikan dan dikonsumsi. Namun masih ada produsen loloh cemcem yang tidak melakukan hal tersebut. Penelitian ini dilakukan untuk mengetahui masa simpan loloh cemcem “Men Nyampuh” di Desa Penglipuran. Metode: Parameter yang dianalisa yaitu angka lempeng total dengan menggunakan media PCA pada loloh cemcem. Penelitian ini menggunakan penelitian deskriptif dengan pemeriksaan laboratorium yang dilakukan di Laboratorium Bakteriologi Jurusan Teknologi Laboratorium Medis Poltekkes Denpasar. Besar sampel pada penelitian ini yaitu 6 botol loloh cemcem dari satu produsen yaitu “Men Nyampuh” dengan teknik pengambilan sampel yaitu simple random sampling. Hasil: Pemeriksaan ALT yang dilakukan didapatkan nilai ALT yang melebihi batas cemaran mikroba pada waktu penyimpanan ke 48 jam pada suhu ruangan (25 - 32°C) yaitu, 1,2 x 106 koloni/ml sudah tidak dapat memenuhi syarat dan melebihi batas cemaran mikroba pada standar BPOM No 13 tahun 2019 yaitu 106 koloni/ml. Pada suhu pendingin (1 - 4°C), nilai dari ALT pada loloh cemcem yang disimpan selama 96 jam masih memenuhi syarat yaitu, 1,6 x 105, tetapi pada jam ke 96 nilai ALT dari loloh cemcem sudah hampir mendekati nilai standar BPOM No 13 tahun 2019. Simpulan: Waktu penyimpanan dari loloh cemcem yang disimpan di suhu ruangan adalah 1 hari dan pada suhu pendingin adalah 4 hari. Produsen loloh cemcem diharapkan menjaga mutu dan kualitas serta mencantumkan expired date pada produknya. Kata kunci: loloh cemcem, angka lempeng total, suhu, desa penglipuran
