Abstract
Abstract. Daluman ice is widely known as a traditional drink, which could be found at food street vendors, traditional market, even international hotels and restaurants. Although it contains potential energi and nutrient sources, it could have high risk of microbial contamination because of their texture and preparation process. These include high level of water, coconut milk process manually, and placed in open areas. This study aims to deter- mine the content of energi and nutrients and microbial contamination of coliform bacteria and E. coli in daluman ice. The study was conducted using a survey of six daluman ice vendors including food street vendors, traditional markets and restaurants in the city of Denpasar. The results showed that the average energi content per serving of daluman ice is 295.9 kcal with an average protein content of 4.7 grams. It is also found that the six samples contained coliform bacteria contamination and even two of them contained E. coli micro- bial contamination. This suggests that the daluman ice studied in Denpasar not meet food safety requirements. Keywords: daluman ice, E. coli, food security
