Abstract

BACTERIOLOGICAL QUALITY OF SERAPAH BABI IN SUKAWATI VILLAGE ABSTRACT Poor food quality can lead to health problems, one of which is diarrhea. Food quality can be influenced by the presence of microbes in the food. The microbial content in food can be determined by measuring the total plate count (TPC). Serapah babi is a traditional Balinese dish made from pork mixed with local spices and then cooked. This type of food is prone to microbial contamination due to the raw ingredients used and the traditional processing methods.This study aims to calculate the total plate count in serapah babi and compare the results with the standards set by the Indonesian National Agency of Drug and Food Control Regulation Number 13 of 2019 concerning the Maximum Limit of Microbial Contamination in Processed Food. This research also aims to assess the personal higiene and sanitation conditions of serapah babi vendors.The method used in this study is a descriptive method. The procedure follows SNI 2897:2008, using BPW (Buffered Peptone Water) and PCA (Plate Count Agar) as culture media. The results showed that 14 out of 20 serapah babi samples (70%) had total plate counts exceeding 10⁶ CFU/g. All samples exceeding 10⁶ CFU/g did not meet the requirements set by the regulation. Furthermore, the study revealed that 80% of the vendors had poor personal higiene, and 40% of them operated under poor sanitation conditions. Keywords: Serapah Babi, Total Plate Count GAMBARAN KUALITAS BAKTERIOLOGIS SERAPAH BABI DI DESA SUKAWATI ABSTRAK Kualitas makanan yang buruk dapat menyebabkan masalah kesehatan salah saunya penyakit diare. Kualitas makanan dapat dipengaruhi oleh kandungan mikroba dalam makanan tersebut. Kandungan mikroba dalam makanan dapat ditentukan dengan mengetahui nilai angka lempeng totalnya. Serapah babi adalah makanan berbahan dasar babi yang dicampur dengan bumbu khas bali yang kemudian dipanaskan, makanan ini rentan terkontaminasi mikroba karena bahan dasar yang digunakan serta proses pembuatannya yang masih tradisional. Penelitian ini bertujuan untuk menghitung angka lempeng total pada serapah babi dan dibandingkan dengan Peraturan Badan Pengawas Obat dan Makanan Nomor 13 Tahun 2019 Tentang Batas Maksimal Cemaran Mikroba dalam Pangan Olahan. Penelitian ini juga bertujuan untuk mengetahui kualitas personal higiene dan kondisi sanitasi penjual serapah babi. Metode penelitian yang digunakan adalah metode deskriptif. Tahapan kerja penelitian ini berpedoman dengan SNI 2897:2008 yang menggunakan media cair BPW dan PCA. Hasil yang didapatkan adalah 14 sampel (70%) dari 20 sampel serapah babi yang diteliti memiliki nilai angka lempeng total melebihi 106 CFU/g, seluruh sampel yang memiliki nilai ALT melebihi 106 CFU/g tidak memenuhi syarat dalam peraturan yang ditetapkan. Hasil penelitian menunjukkan sebanyak 80% pedagang serapah babi memiliki kualitas personal higiene yang buruk dan sebanyak 40% pedagang serapah babi memiliki kondisi sanitasi yang buruk.
