Abstract
DESCRIPTION OF SANITARY HYGIENE OF FOOD STALLS IN SANUR KAUH SUB-DISTRICT SOUTH DENPASAR YEAR 2025 ABSTRACT This descriptive study aims to describe the hygiene and sanitation of food stalls in Sanur Kauh Village, South Denpasar in 2025, based on Permenkes No. 14 of 2021. Direct observation of 35 food stalls showed that 51.4% met overall hygiene and sanitation requirements. The lowest aspect was the selection and storage of food ingredients (82.9% did not meet the requirements), followed by the kitchen and service areas (both 65.7% did not meet the requirements). The best aspects were presentation (100% met the requirements) and packaging of cooked food (97.1% met the requirements). It was concluded that the quality of hygiene and sanitation was not optimal, especially in terms of environment and storage, although the handling of cooked food was good. GAMBARAN HIGIENE SANITASI WARUNG MAKAN DI KELURAHAN SANUR KAUH KECAMATAN DENPASAR SELATAN TAHUN 2025 ABSTRAK Penelitian deskriptif ini bertujuan menggambarkan higiene sanitasi warung makan di Kelurahan Sanur Kauh, Denpasar Selatan tahun 2025, berdasarkan Permenkes No. 14 Tahun 2021. Observasi langsung pada 35 warung makan menunjukkan 51,4% memenuhi syarat higiene sanitasi secara keseluruhan. Aspek terendah adalah pemilihan dan penyimpanan bahan pangan (82,9% tidak memenuhi syarat), diikuti area dapur dan pelayanan (keduanya 65,7% tidak memenuhi syarat). Aspek terbaik adalah penyajian (100% memenuhi syarat) dan pengepakan makanan matang (97,1% memenuhi syarat). Disimpulkan kualitas higiene sanitasi belum optimal, terutama pada aspek lingkungan dan penyimpanan, meskipun penanganan makanan matang sudah baik.
