Abstract

Hospital food service is more complex and requires special handling to avoid the hazards that may occur. Hazard Analysis Critical Control Point (HACCP) is a system that can minimize the occurrence of hazards during food service in hospitals. The purpose of this study was to determine the differences in knowledge and attitudes of food handlers before and after counselling at the nutrition installation of the Bali Mandara Hospital. The type of research used was pre-experimental with a one group pre-test post test research design which was carried out in March 2022 at the Nutrition Installation of the Bali Mandara Hospital. The sample size in this study were 36 samples. The data analysis was performed using test paired sample T-Test. The average knowledge before counselling was 73,38 and after counselling was 97,22, then average attitude before counselling was 49,99 an after counselling 50,00. Based on the results of statistical tests, it is known that there is a difference in the knowledge of food handlers at the nutrition installation before and after being given counseling with a p-value of 0.001 (p≤ 0.05) and there is no difference in the attitude of food handlers at the nutrition installation before and after being given counseling with p-value 0.66 (p≥ 0.05). The provision of counseling about HACCP to food handlers is expected to be carried out over period of a time, in a longer frequency and in a sustainable manner so that there can be changes in positive attitudes and practical behavior at work.
