Abstract

NUTRITIONAL CONTENT AND ACCEPTANCE OF LAWAR KLUNGAH AT RUMAH MAKAN EKA SRI NADI EKASARI VILLAGE MELAYA DISTRICTS JEMBRANA REGENCY ABSTRACT Lawar klungah is a traditional food made from young coconut (klungah), using locally produced ingredients. The purpose of this observation was to determine the nutritional content and acceptability of lawar klungah at Rumah Makan Eka Sri Nadi Ekasari Village Malay Districts Jembrana Regency. Data collection was obtained with 16 observation subjects taken from visitors who came to Eka Sri Nadi Restaurant. Organoleptic test data with the method obtained directly from this observation, includes the organoleptic quality tested using the preference test, namely color, texture, taste, aroma, and overall acceptance. The panelist test of consumer acceptance of the lawar klungah color obtained the lowest score of 3 (slightly like) and the highest value of 4 (likes) and an average of 3.75 in the like category. Rasa got the lowest score, namely 4 (likes) and the highest value was 5 (liked very much) and the average was 4,37 in the like category. Aroma obtained the lowest score, namely 3 (slightly like), and the highest score was 4 (like) and the average was 3 in the category of somewhat like. Texture gets the lowest score, namely 3 (slightly like), and the highest value is 4 (like) and the average is 3.25 in the category of somewhat like. Overall acceptance obtained the lowest score of 4 (likes) and the highest score of 5 (very liked) and an average of 4.0 6 in the like category.Based on the results of the nutritional content, there are 100 grams of lawar klungah, namely 165 Kcal Energy, 16.5 grams Protein, 9.5 grams Fat, 28.5 grams carbohydrates, 2.85 mg Iron. In 1 serving of lawar klungah bowl of 140 grams, namely 428.7 Kcal Energy, 10.9 grams Protein, 13.13 grams Fat, 27.78 grams Carbohydrates, 4.35 mg Iron.
