Abstract

OVERVIEW SITUATION HYGIENE SANITATION AND BACTERIOLOGICAL QUALITY TOFU IN HOUSEHOLD INDUSTRY TOFU SUNARYO ABSTRACT Tofu is a non-fermented soy products are favored and popular in Indonesia as well as tempeh, soy sauce, and tauco. Tofu has the best quality of vegetable protein because it has the most complete amino acid composition and is believed to have a high digestibility (by 85% -98%). The results of observations Sunaryo Household industry has not been certified hygiene and sanitation Household industry issued by the Department of Health so that uncertified Quality Industrial Hygiene and Sanitation Household industry, other than that based on interviews of workers do not know the application of the principles of hygiene sanitation and hygiene include the location of the manufacturer's processing know. The purpose of this study was to determine the condition of hygiene sanitation and bacteriological quality tofu in the household industry tofu sunaryo .This type of research used in this study is descriptive research, where this type of research is to examine an object and describe the existing conditions with direct observation using the inspection form as a means of determining the level of hygiene sanitation firm Tofu. Based on these values indicate the total value of the state of sanitation is 19 (nineteen) or in both categories. On examination sempel tofu laboratory analytical results on the first measurements showed that the two samples of tofu (66.7%) were eligible and the tofu samples (33.3%) are not eligible. In the analysis 2, 3 samples showed that tofu eligible (100%). In the analysis 3, showed that the two samples of tofu (66.7%) were eligible and the tofu samples (33.3%) are not eligible. Given the need for such reform efforts on the state of the floor should be kept clean, dry, smooth, and not conical. In the washing process variable instruments should be done in flowing water.
