Abstract
TOTAL PLATE COUNT AND TOTAL COLIFORM BACTERIA OF ICE CUBES BEVERAGES SELLER IN THE KRENENG MARKET, DENPASAR CITY Ice cubes are food ingredients with water as basic ingredients which are frozen in the refrigerator which is usually used as a refreshment in drinks. Water-based ice cubes must meet the BPOM requirements because if the ice cubes do not meet the requirements, it will interfere with the health of the people who consume them. This study was conducted to determine the quality of ice cubes based on microbiological parameters. The parameters analyzed in this study were the Total Plate Count (TPC) and total of coliform bacteria using the MPN method. This research is a descriptive study and laboratory examinations were carried out at the Panureksa Public Health Laboratory. The sample size is 12 samples with a sampling technique that is saturated sampling technique. The results of laboratory all samples (100%) does not meet the requirements of BPOM Number 16 of 2016. It’s hoped that beverage traders can pay attention to the hygiene and sanitation of the surrounding environment so that the marketed ice does not cause health problems Keywords : Ice cubes, Total Plate Count, Coliform, Kreneng Market
