Abstract

ANALYSIS OF Escherichia coli AS MICROBIAL CONTAMINATION ON THE LOCAL PRODUCTION OF TOFU IN KLUNGKUNG REGENCY, BALI ABSTRACT Background: Tofu is a food product made of soybean. It is nutritious and low in price, so people usually choose it as an option for their daily protein fulfillment. But because of the characteristics itself, tofu is easily damaged, one of which is by bacteria. Through the observation, it is known that the processing of tofu factories in Klungkung is still simple and pay less attention to their hygiene, which is a possible reason for a microbial contamination such as Escherichia coli. Purpose: to determine the presence of Escherichia coli as microbial contamination on the local production of tofu in Klungkung Regency, Bali. Methods: This research is a descriptive study, with a non-random sampling technique, namely saturated sampling (census). Escherchia coli examination includes MPN test, implantation on EMBA media, and testing on SIM media. The results obtained were compared with the standard number 13 from BPOM which regulated on the year of 2019. Results: The results show that nine of the fifteen samples were found positive for Escherichia coli, with 0,4 MPN as the lowest and >160 MPN/g for the highest. Conclusion: after adjusting the measured results to the regulation existed, from three factories tested, one of them exceeded the required threshold for Escherichia coli (3 APM / g) with an average number of > 160 APM / g. Suggestion: we hope that the tofu producers would like to pay more attention to hygiene in the tofu processing, and in line with that, for the implementers of related policies to carry out regular monitoring regarding this matter.
