Abstract

THE RELATIONSHIP OF KNOWLEDGE LEVEL OF SANITATION ON FOOD CONTACTERS WITH FOOD SAFETY IN MUJAIR NYAT-NYAT FOOD STALL IN SONGAN VILLAGE TOURISM AREA ABSTRACT The level of knowledge of food vendors is one of the supporting factors of sanitary hygiene in food processing. The purpose of this research is to find out the relationship of the level of hygiene knowledge of food food vendors with food safety in food stalls mujair nyat-nyat in the tourism area of songan village. This type of research is observational with cross sectional design.Based on the results of research conducted on 15 food vendors obtained the results of the penjamah who have a good knowledge level of 2 people (13.3%), the level of knowledge is enough as much as 7 people (46.7%) and less knowledge level of 6 people (40%). Food safety was reviewed from food safety scores, koliform bacteria and escherichia coli. Food safety score with the category is being obtained 13.3% and with the category of prone but safe to consume 86.7%. Based on the results of bacteriological examination on 15 samples mujair nyat nyat stated that 6 samples studied contain coliform bacteria, with contamination exceeds the standard limit of processed foods that are ready to be consumed, namely <3 MPN / g and 4 samples positive over clouding E.coli bacteria after testing using EMBA media. Based on the results of the Chi Square Test obtained a value of 0.001 (<0.05) shows that there is a significant relationship between variable Knowledge Level and Food Safety Score in the stalls mujair nyat nyat in the tourism area of Songan Village. The conclusion of this study is that the level of knowledge affects food safety in mujair nyat-nyat food stalls. Keywords: Level of knowledge, Food Safety, Mujair Nyat-Nyat
