Abstract

DESCRIPTION OF THE QUALITY OF BOX RICE AND THE VALUE OF MACRO NUTRITION FOR SALE IN PEGUYANGAN KAJA VILLAGE ABSTRACT Food quality is a characteristic of a product whose ability to bear a promise or insertion to satisfy customer needs. In addition, the quality of food products is something that can be offered to meet the needs and desires of quality customers which include physical objects, services, places, organizations, ideas and individuals who are able to be offered to be asked for, searched for, purchased, used or consumed by the market as a fulfillment of their needs and desires in accordance with their ability to food and beverages in accordance with customer expectations (Anisa, 2019). The type of this research is observational research, namely research by observing the research subject. The research design used a cross sectional approach. The sample in this study was Nasi Kotak Mika which is sold in Peguyangan Kaja Village. From the 6 stalls, 11 rice boxes were studied. The results showed that the most preferred sample color code criteria was rice 4, namely mixed rice with white rice filling, noodles, tofu, beans, omelette, sisit chicken and sweet tempeh, then for The most preferred taste criteria for the sample code is rice 5, namely mixed rice with white rice filling, corn + green beans, sisit chicken and sweet tempeh, then for the aroma criteria the most preferred sample code is rice 3, namely chili sauce chicken rice with white rice filling. and sambal matah chicken, then for the texture criteria the most preferred sample code is rice 11, namely mixed rice with white rice filling, sisit chicken, noodles, sweet tempeh, saur and chili sauce, then for the criteria for the appearance of the sample code the most preferred is rice 9, namely fried rice with a filling of fried rice, sausage and omelette. and for the content of macro nutrients, the results obtained are energy 423.2 KKal, 14.6 grams protein, 14.8 grams fat and 55.34 grams carbohydrates, from these results, it is found that the content of macro nutrients is still in the low category when compared to the 2019 RDA. with the age group 19-29 years (female) due to serving 1 box of mica rice served in small quantities Keywords: Food Quality, Nutritional Value, Box Rice
