Abstract

IDENTIFICATION OF TRADITIONAL FOODS OF BALI FOR THE POTENTIAL OF CULINARY TOURISM ABSTRACT Traditional food is food that is processed from food produced locally, with a process that has been controlled by the community, the result is a product whose taste, shape and way of eating is known, loved, missed, and even characterizes certain community groups. The purpose of this research is to identify Traditional Balinese Food for Culinary Tourism Potential. Research Methods identify and examine topics based on scientific journals/reviews, repository research reports, and books. The results of the study show that traditional Balinese foods such as pork guling, chicken betutu and satay lilit langaun in 100 grams contain protein in the range 8,15-20,61 grams, fat in the range 7.82-35.48 grams, carbohydrates in the range 4.54-12.87 g.Babi guling in 1 serving contains a protein range of 25-41.9 grams, fat 22.6-50 grams, 25 -46.5 grams. Traditional Balinese food has grown rapidly, seen from the interest of tourists to enjoy traditional Balinese culinary. So that the potential for businesses such as pork guling, betutu chicken and satay wrapped around languan are increasingly potential to be developed Keywords: Identification of Balinese Traditional Food
