Abstract

The success of nutrition services is associated with the patient's acceptance of food by observing leftovers. Processing of vegetable protein in the form of soft food that tends to be boiled can affect food residue. The purpose of this study was to determine the relationship between the level of acceptance of vegetable protein and the food leftovers of patients in the Medical ward room of Buleleng Regency Hospital. The type of research was observational with a cross-sectional design. The number of samples in this study were 50 people. Vegetable protein acceptance rate data was collected by interview using the help of the hedonic test form and processed by administration score 1-3. Leftover food data is collected by food weighing by processing the difference between the initial weight minus the final weight divided by the initial weight multiplied by 100%, the category is large if >20% and little if <20%. The analysis used is Chi Square with an average approach. The level of patient acceptance of the vegetable protein menu is mostly classified as "rather like" (96%). There are 4 menus (23.5%) with "dislike" ratings, 7 menus (41.2%) "rather like" and 6 menus (35.3%) "like". 98% of the samples had a lot of leftovers. There are 11 menus (64.7%) classified as large residues, 6 menus (35.3%) classified as small residues. There is a significant relationship between the level of acceptance of vegetable protein and food waste (p = 0.002) and there is a significant relationship between the level of preference for vegetable protein menus and food waste (p = 0.001).
