Abstract

Cider drink can be used as replacement from milk every people as have a lactose intolerance or for those who don't like cow's milk then peanut gude cider drinks can be used as a substitute for cow's milk. Content of peanut skin black phenolic compounds containing gude (anthocyanin) which has a capacity of antioxidant primer. The purpose of this research is to know the influence of dilution levels against a nutty quality cider drinks gude (Cajanus cajan). The research design of Random groups (RAK) with 5 types of treatment, consisting of 3-time repeats so consists of 15 units of the experiment. From subjective analysis results against drink cider beans taste gude 2.43 - 4.49 (don't like - like), the scent of 2.11 - 4.47 (don't like - like), color 2.80 - 4.81 (neutral - really like), 2.32 - 4.48 consistency (do not like - like), the overall reception of 2.56 - 4.35 (neutral - like), the quality of the aroma of 1.83 - 2.97 (somewhat unpleasant - not unpleasant), less color 1.25 - 2.57 (slightly chocolate - brown), quality consistency 1.25 - 2.57 (liquid - viscous). Objective analysis results drink cider beans gude analyzed by DPPH method, the rate of dilution of 27.22%, 1:8 1:9 of 1:10 amounted to 25.38%, 24.03%, 1:11 of 21.34%, 1:12 of 20.87%. The quality of the bean juice drinks a good gude 1:8 dilution level because it contains a high antioxidant capacity of any treatment dilution of 27.22%.
