Abstract

Hospital nutrition services must strictly adhere to food safety standards to prevent bacterial contamination. Food handlers' behavior in implementing hygiene principles is significantly influenced by their level of knowledge and work attitudes. This study aimed to determine the relationship between the level of knowledge and attitude of food handlers and the implementation of food hygiene and sanitation at the Nutrition Department of RSUD Wangaya, Denpasar. This quantitative crosssectional study was conducted from March to May 2026. Samples were selected using a purposive sampling technique, obtaining 37 respondents. Data were collected through structured questionnaires and direct observation checklists, and then analyzed using the Chi-Square statistical test. The majority of respondents demonstrated good knowledge (67.6%), positive attitudes (83.8%), and good implementation of hygiene and sanitation (67.6%). Bivariate analysis revealed a significant relationship between the level of knowledge and the attitude of food handlers and the implementation of hygiene and sanitation (p = 0,012; CC = 0,438). Additionally, a significant relationship was found between attitude and the implementation of hygiene and sanitation (p-value = 0.005; CC = 0.472). There is a significant relationship between the level of knowledge and attitude of food handlers and the implementation of hygiene and sanitation at RSUD Wangaya. The management is recommended to optimize supervision and conduct regular training.
