Abstract
ANTIBACTERIAL TEST KOMBUCHA ROSELLA TEA AGAINST Escherichia coli ABSTRACT Public awareness along with the development of the times began to change in maintaining consumption patterns, such as consuming functional drinks. Kombucha rosella tea is able to produce important compounds for the body such as polyphenols, organic acids, vitamin B complex, vitamin C, enzymes and antibiotics. The use of antibiotics as a treatment against Escherichia coli can cause side effects and resistance so that this rosella tea kombucha can be an alternative. The purpose of this study was to determine the activity of rosella tea kombucha as an antibacterial against Escherichia coli bacteria. This type of research is a true experiment with posttest-only group design design. The results of the study found that rosella tea kombucha can inhibit the growth of Escherichia coli bacteria based on variations in fermentation time on the 6th, 8th, 10th, 12th and 14th days with successive inhibition zone diameters of 7.27 mm; 7.97 mm; 8.43 mm; 9.57 mm; and 12.73 mm, while in the positive control group a zone of 40.95mm and a negative control of 0 mm were obtained. Statistical tests with the One Way ANOVA test obtained a sig of (0.000) < 0.05 which means that significantly, there are differences in the growth inhibition zones of Escherchia coli at various fermentation times of rosella tea kombucha. Conclusion There is a difference in the inhibition zone from the variation in the fermentation time of rosella tea kombucha to the growth of Escherichia coli bacteria with the largest inhibitory zone diameter indicated by the variation in the fermentation time of 14 days with a strong category. Keywords : Kombucha rosella tea; Escherichia coli; Inhibition zone UJI AKTIVITAS ANTIBAKTERI KOMBUCHA TEH ROSELLA TERHADAP BAKTERI Escherichia coli ABSTRAK Kesadaran masyarakat seiring berkembangnya zaman mulai berubah dalam menjaga pola komsumsi, seperti mengkonsumsi minuman fungsional. Kombucha teh rosella ini mampu menghasilkan senyawa penting bagi tubuh seperti polifenol, asam organik, vitamin B kompleks, vitamin C, enzim dan antibiotik. Penggunaan antibiotik sebagai pengobatan terhadap Escherichia coli dapat menimbulkan efek samping dan resistensi sehingga kombucha teh rosella ini dapat menjadi alternatif. Tujuan penelitian ini untuk mengetahui aktivitas kombucha teh rosella sebagai antibakteri terhadap bakteri Escherichia coli. Jenis penelitian ini adalah true experiment dengan desain Posttest-Only Group Design. Hasil penelitian didapatkan bahwa kombucha teh rosella dapat menghambat pertumbuhan bakteri Escherichia coli berdasarkan variasi waktu fermentasi hari ke-6, ke-8, ke-10, ke-12 dan ke-14 dengan diameter zona hambat berturut-turut sebesar 7,27 mm ; 7,97 mm ; 8,43 mm ; 9, 57 mm ; dan 12,73 mm, sedangkan pada kelompok kontrol positif didapatkan zona sebesar 40,95mm dan kontrol negatif sebesar 0 mm. Uji statistik dengan uji One Way ANOVA diperoleh sig sebesar (0,000) < 0,05 yang artinya signifikan, ada perbedaan zona hambat pertumbuhan Escherchia coli pada berbagai waktu fermentasi kombucha teh rosella. Simpulan Terdapat perbedaan zona hambat dari variasi waktu fermentasi kombucha teh rosella terhadap pertumbuhan bakteri Escherichia coli dengan diameter zona hambat terbesar ditunjukkan oleh variasi waktu fermentasi 14 hari dengan kategori kuat.
