Abstract
FOOD SAFETY OF SCHOOL CANTINES BASED ON FOOD SAFETY SCORE (FSC) IN SD N 1 PESEDAHAN, MANGGIS DISTRICT, KARANGASEM REGENCY Abstract The school canteen is a place at school where all school residents can buy street food, both in the form of ready-to-eat food and processed food. In providing food, of course, it is necessary to pay attention to the safety and sanitation of the food. The purpose of this observation was to determine the food safety of the school canteen based on the food safety score (SKP) in Peesedahan Village, Manggis District, Karangasem Regency. This observation was carried out by interviewing and observing in the canteen of Sd N 1 Pesedahan, in April 2022. The subject of this observation was the elementary school canteen, which consisted of 3 canteens. Respondent identity data obtained through interviews and processed descriptively. Food Safety Score data is obtained by using a questionnaire form and Direct observations were then processed using a master table and presented descriptively. From the 3 canteens, it was found that it was not found to meet 100% of food safety requirements. the total average value of the Selection and Storage of food ingredients in the three canteens only reached 88%. For the cooking hygiene of the 3 canteens, the average hygiene value of the processing staff reached 84%, for the processing of foodstuffs the average value of the three canteens was 93%. The distribution of food from the three canteens with an average value of only 81%. After observing the school, it is hoped that the school can pay attention to the safety of food administration in the school canteen. Keywords: food safety, school catholic, food safety score.
