Abstract

EFFECT OF THE ADDITION OF MORINGA LEAF PUREE (Moringa oleifera) ON THE CHARACTERISTICS OF NASTAR CAKE ABSTRACT Nastar cake is one of the pastries that are round, yellow with a characteristic in it contains pineapple jam and decorated with cloves or grated cheese. The purpose of this study is to find out the Effect of The Addition of Moringa Leaf Pure (Moringa oleifera) on the Characteristics of Nastar Cake.The research method is experimental using a Randomized Block Design (RBD) with 5 treatments and 3 repetitions, with quality characteristics tested including texture quality, color, aroma, taste, overall acceptance, texture quality and color quality. As for the chemical quality tested, namely protein levels, iron (Fe), antioxidant capacity and water content. The results showed that there was an influence on the treatment of the addition of Moringa leaf puree on the color, texture, taste, aroma, and overall reception and levels of protein, iron, antioxidant capacity and water content. The result of acceptable treatment is the addition of Moringa leaf puree, namely the third treatment with the addition of Moringa leaf puree as much as 15% with the preferred texture, preferred color, preferred aroma, overall acceptance is preferred, soft texture quality and dark green color quality. The third treatment nastar cake chemical quality test has a protein content of 9.22%bb, iron 3,833 mg/100 g, antioxidant capacity of 0.05 mg / L GAEAC, and a water content of 16.09%.
