Abstract

THE EFFECT OF ADDITIONAL PURE LEAVES OF MORINGA OLEIFERA ON THE CHARACTERISTICS OF TOUCH WALIK ABSTRACT Tofu walik is a combination of tofu behind and processed chicken meatballs. Modification of tofu walik with the addition of moringa leaf filling as a source of iron (Fe) and antioxidants may also affect the organoleptic quality characteristics. The purpose of this study was to determine the organoleptic characteristics and objective test of iron (Fe), antioxidant capacity, water content and protein content of tofu walik pure Moringa leaves. The research method used is the experimental method. This type of research used a randomized block design and continued with the ANOVA test. The results showed that there was a very significant effect on the treatment of adding Moringa leaf puree to color, color quality, texture, taste, aroma, aroma quality and overall acceptance. And the results of the objective laboratory test showed that there was a significant difference in the levels of iron (Fe), antioxidant capacity and levels, but there was no significant difference in the protein content of tofu walik with the addition of moringa leaf puree. An acceptable treatment result was the addition of moringa leaf puree as much as 10% of moringa leaf puree from the weight of chicken meat.
