Abstract

EVALUATION OF FOOD ORGANIZATION AT PASRAMAN GURUKULA BANGLI One of the organization's meals is the provision of dormitory meals. Foodservice has the aim of meeting the target consumption needs. In food service, it is necessary to evaluate both the components that can be implemented and the fulfillment of the nutritional needs that are served. The purpose of this observation is to evaluate the administration of food at the Pasraman Gurukula Bangli. The place of observation is the Pasraman Gurukula Bangli Foundation, with respondents 5 kitchen employees and 16 students. Foodservice data were collected by means of interviews and observations and then presented descriptively. Food consumption data were collected using a 24-hour recall method, processed using a nutrisurvey program and presented descriptively. Food management data which includes budget planning to distribution at the Pasraman Gurukula Bangli Foundation. Of the 10 components of food administration, only 7 components were implemented. The number of dishes did not match the contents of my plate because the subject did not eat fruit. The portion of food based on the contents of my plate is 100% not in accordance with the contents of my plate. The level of energy consumption is a deficit of 94%, the level of normal carbohydrate consumption is only 38% and a weight deficit of 63% and the level of consumption of protein, fat, and Fe is in the category of a weight deficit of 100%. It is hoped that after the observation, the Pasraman Gurukula Bangli will cooperate with volunteers who work as nutritionists to assist in the implementation of food organizers.
