Abstract
ABSTRACT Telang flower is one of the flowers that is rich in flavonoid antioxidants. This study aims to determine the effect of the addition of telang flower extract on the characteristics of boba. This study used an experimental research method with a type of Randomized Block Design (RAK), which consisted of 5 treatments, namely 7.5%, 10%, 12.5%, 15%, 17.5%. Data were analyzed using ANOVA using the BNT follow-up test. The results showed that the addition of telang flower extract had a significant effect on color, taste, overall acceptance, color quality, taste quality, carbohydrate content, water content and antioxidant capacity but had no effect on aroma, texture and quality of boba texture. The best treatment from this study was P3 with (addition of telang flower extract with a concentration of 12.5%) with color characteristics 3.78 (like), taste 3.32 (like), aroma 3.09 (neutral), texture 3.66 (like), overall acceptance 3.63 (like), color quality 2.33 (bright blue), taste quality 2.20 (sweet), texture quality 2.58 (chewy) with 47.29% carbohydrate content, water content 52.88%, and antioxidant capacity 0.12%bb.
