Abstract
Foodborne disease is a health isssue of the society as a result of consume food that contaminated with microorganisms or chemicals. Food contamination can happen at any stage of food production to the food consumed. The most common clinical manifestations are gastrointestinal symptoms. Spring rolls is one of food that common sale in tourist areas which susceptible to microorganism contamination due to food handler hygiene practices and production sanitation that are not up to standard. The purpose of this study was to determine the difference off total microbes based on food safety scores of spring rolls in Sanur Beach.This study was used analytic observational with a cross sectional design. The samples in this research were 16 samples of spring rolls which sale at Sanur Beach. Data obtained by some method such as observation, interview and laboratory test. The results showed that 10 samples (62,5%) were in vulnerable but safe for consumption category. The results of total microbes contamination showed that 3 samples (18.75%) did not appropriate the requirements for total microbes contamination and 3 samples (18.75%) did not appropriate requirements for coliform and 1 sample (6.25%) contained E. coli. Based on statistic tests found the differences of total microbes contamination with food safety scores with Asymp.Sig = 0,01. From this result hoped that the Publich Health Office and other institutions will provide education about hygiene and sanitation so the food handler can apply it in the production of spring rolls so the pathogenic microbe contamination can reduce.
