Abstract
The Correlation Of Soft Food Presentation With The Food Waste At Sanjiwani Hospital Gianyar ABSTRACT Food waste is the weight of food on the plate that is not finished by the patient and is grouped by type. Factors that affect food waste is food presentation. The purpose of this study was to determine the relationship between food presentation and food waste as an indicator of the quality of food delivery at the Sanjiwani Hospital, Gianyar. This type of research is observational with a cross sectional design. Sampling was carried out on all patients who received food in soft form for 54 samples. The presentation of food is very closely related to the occurrence of food waste. In the morning meal, 34 samples (52.42%) with food leftovers <20% and 20 samples (50.70%) left food 20%. During the day 35 samples (64.97%) with food scraps <20% and 19 samples (41.57%) showed food waste 20% and in the afternoon serving 40 samples (68.15%) which showed little leftovers and 14 samples (31.84%) with a lot of leftover food (> 20%). The average percentage of leftover food in one day based on the eating group, which is the highest food for animal dishes, is 28.98%. Based on the results of the Spearman test obtained, it can be concluded that there is a relationship between the presentation of soft food and the rest of the meal at the Sanjiwani Hospital, Gianyar, where the taste and texture of the food greatly affect the occurrence of food waste in the patient at the Sanjiwani Hospital, Gianyar.
