Abstract

Background : Salted Egg is a processed egg preservated by salt. Enterobacteriaceae is one of intestinal bacteria family with severe species that live in colon of human and animal. Some Enterobacteriaceae affect human health beacuse it can cause food-born disease. Objective : This research goals to identify the Enterobacteriaceae bacteria on salted egg, marketed at a Public Market in Gianyar Regency Method : This is a descriptive research, the sample population using 30 salted eggs that marketed at a Public Market in Gianyar Regency. The samples taken by Cluster Sampling technique. The Samples are inoculated on MCA media and grown colony continued on biochemistry investigation test such as Triple Sugar Iron Agar (TSIA), Indol Methyl-Red Voges-Proskauer Simmon’s Citrate (IMViC), and urease. Result : In this research found 7 (23%) samples indicated grown colony on MCA media, and 23 (77%) samples are not indicated grown colony. The grown colonies tested on biochemistry investigation and found baceria species such as : Shigella soneii (20%), Salmonella sp. (60%), and Citrobacter Freundii (20%). Conclusion : From 30 (100%) samples isolated on MCA media are found 7 (23%) samples indicated grown colony, and 23 (77%) samples are not indicated grown colony of bacteria.
