Abstract
Background: Traditional snacks are foods that are quite popular in public. Traditional snacks that are not hygienic and are indicated by microbial contamination have the potential to cause disease. One of cause is lack of application of food hygiene and sanitation by hawker sellers. This research was conducted to determine the bacteriological quality of traditional Balinese snacks at Senggol Gianyar Market. The parameter checked is the bacteria numbers. Method: This research used descriptive research with laboratory test conducted at the Bacteriology Laboratory of the Medical Laboratory Technology Department. Sample in this research is 8 types of traditional Balinese snacks, as much 13 samples with sampling technique that is Non Probability Sampling (purposive sampling). Result: The results of bacteria numbers test is carried out of the 13 samples that was test there were 4 samples of traditional Balinese snacks (31%) that meeting the standard (<105) and 9 samples of traditional Balinese snacks (69%) not meeting the standard (>105) based on BPOM RI regulation No.16 of 2016. Conclusion: Based on the results above, it can be concluded that the bacteria numbers of traditional Balinese snacks at Senggol Gianyar Market obtained 4 samples that meet the standards and 9 samples not meet the standard. Traders of traditional Balinese snacks are expected to pay attention to the quality of traditional Balinese snacks sold. Keywords: traditional Balinese snacks, bacteria numbers, Senggol Gianyar
