Abstract
THE EFFECT OF COMBINATION OF SEAWEED (Eucheuma cottonii) AND PINEAPPLE (Ananas comosus (L) Merr) ON THE CHARACTERISTICS OF THE JELLY CANDY ABSTRACT Jelly candy is a soft texture candy made from seaweed and pineapple. This study aims to determine the effect of seaweed and pineapple on the characteristics of chemical and organoleptic on the jelly candy. The type of research that will be used in this study is Experimental research with Randomized Block Design (RBD). The study was conducted with 5 types of treatment, each treatment consisted of 3 replications. The organoleptic test results showed that the combination of seaweed and pineapple in jelly candy had a significant effect on taste, aroma, texture, overall acceptance and elasticity. However, the results of color organoleptic testing showed no significant effect on jelly candy. On the results of chemical analysis, water content, ash content, crude fiber content and vitamin C levels showed significant effect. However, reducing sugar levels showed no real effect on jelly candy. The combination of pineapple and seaweed treatment in treatment P4 (seaweed 40%: pineapple 60%) is the best treatment with water content 16.11%, 0.50% ash content, reduced sugar content 10.93%, fiber content 0.76% bb and vitamin C content 23.09 mg / 100g. P4 treatment in 1 portion (5 grams) contains crude fiber of 0.038g and vitamin C of 1.1545mg. This shows that in 1 portion of jelly candy can only meet fiber requirements of 0.001g and vitamin C as much as 0.02mg per day for the needs of children aged 7-9 years.
