Abstract
THE CORRELATION OF KNOWLEDGE AND THE FOOD HANDLER ATTITUDE WITH ASSEMBLING THE HYGIENE AND SANITATION IN NUTRIENT INSTALLATION RSUD WANGAYA DENPASAR 2018 ABSTRACT Hygiene food handlers very important to production process because food handlers is planners, implementers and food processors in a food organization. Food sanitation can be seen from the series of six principle and food sanitation that is sorting of food raw materials, storage of food raw materials, food processing, transporting food, food storage, and food presentation. The purpose of the research to knowing of knowledge and food handler attitude with assembling the hygiene and sanitation of food in Nutrient Installation at RSUD Wangaya Denpasar. The method of the research is analytic with cross sectional study design. The research is population research with 33 sampled. This research is population research because total sampled less than 100 sampled. The result analysis of the research found there is not significant correlation between knowledge with the assembling of hygiene and sanitation with is ρ–value 0,152 and there is not significant correlation between food handler attitude with the assembling of hygiene and sanitation with is ρ–value 0,182. The suggestion for food handlers is wash hands with soap and the running water before working, using a mouthpiece and not talking. Keywords : hygiene, sanitation, food handlers
