Abstract

THE DESCRIPTION OF BACTERIOLOGICAL IN PROCESSED FOOD AT THE CANTEEN POLYTECHNIC OF HEALTH DENPASAR BASED ON TOTAL PLATE COUNT ABSTRACT Food safety is a crucial aspect in the provision of meals within educational environments. One method to assess the microbiological quality of food is the Total Plate Count (TPC). This study aims to determine the bacteriological quality of processed foods sold at the Poltekkes Kemenkes Denpasar canteen based on TPC, and its relationship with vendors’ personal hygiene, age, and education level. This descriptive quantitative study involved 10 randomly selected food samples from 10 vendors. TPC analysis was conducted at the Kerthi Bali Sadhajiwa Health Laboratory, and hygiene data were collected through questionnaires. The results showed that 60% of samples met the TPC standard (≤1.0×10⁵ CFU/gram) according to BPOM 2012, while 40% exceeded the limit. All foods from vendors with good hygiene met the standard, whereas those from vendors with poor hygiene did not. Education and age were also linked to food quality. In conclusion, vendors' personal hygiene strongly affects the microbiological quality of food, followed by age and education level. GAMBARAN KUALITAS BAKTERIOLOGIS PADA MAKANAN OLAHAN DI KANTIN LINGKUNGAN POLTEKKES KEMENKES DENPASAR BERDASARKAN ANGKA LEMPENG TOTAL ABSTRAK Keamanan pangan merupakan aspek penting dalam penyediaan makanan di lingkungan pendidikan. Salah satu metode yang digunakan untuk menilai kualitas mikrobiologis makanan adalah Angka Lempeng Total (ALT). Penelitian ini bertujuan untuk mengetahui kualitas bakteriologis makanan olahan yang dijual di Kantin Poltekkes Kemenkes Denpasar berdasarkan ALT, serta hubungannya dengan personal hygiene, usia, dan tingkat pendidikan penjual. Penelitian ini menggunakan metode deskriptif kuantitatif dengan pengambilan 10 sampel makanan secara acak dari 10 pedagang. Pemeriksaan ALT dilakukan di UPTD Balai Laboratorium Kesehatan Kerthi Bali Sadhajiwa, dan data personal hygiene dikumpulkan melalui kuesioner. Hasil penelitian menunjukkan 60% sampel memenuhi standar ALT (≤1,0×10⁵ koloni/gram) berdasarkan BPOM 2012, sementara 40% tidak memenuhi. Seluruh makanan dari penjual dengan hygiene baik memenuhi standar, sedangkan makanan dari penjual dengan hygiene kurang tidak memenuhi. Pendidikan dan usia juga berpengaruh terhadap kualitas makanan. Kesimpulannya, personal hygiene penjual sangat memengaruhi kualitas mikrobiologis makanan, disusul oleh faktor usia dan pendidikan
