Abstract

ABSTRACT One personal hygiene which can affect the food quality is hand-washing practices of food handlers. The purposes of research is to determine the relationship of predisposing,enabling, reinforcing the practice of hand washing and the presence of microorganisms in food handlers in Kedonganan Beach. The type of research is cross sectional with a 80 food handlers sample in Kedonganan beach. The results with the Chi square test analysis showed there is association between knowledge with the practice of hand-washing (p=0.000, CC=0,469). There is a relationship between handwashing facilities with the practice of hand washing (p=0.000, CC=0,505). There is a relationship between support business owners / managers with the practice of handwashing (p =0.000, CC=0,55). There is a relationship between the community leaders support with the practice of hand washing (p=0,000, CC=0,463). There is a relationship between the health authority support with the hand washing practices (p=0,022, CC=0,248). Binary Logistic Regression test results, to determine the effect of variables indicate support business owners / managers and hand washing facilities factors give effect together with the practice of hand washing by 68.3 %. Factor support the business owner / manager is a most dominant factor that contributes of hand washing practices in Kedonganan Beach. There is 15 % food handlers hands contain bacteria Stapylococcus sp. and 25 % of food handlers hands contain bacteria Escherichia coli. .Conclusions of this study is the individual predisposing, enabling, and reinforcing associated with the practice of hand washing. Factors support business owners / managers and hand washing facilities jointly influence the practice of hand washing. Keywords : Predisposing factors , Enabling , Reinforcing , Hand washing
