Abstract
RELATIONSHIP OF PERSONAL HYGIENE AND FOOD SANITIZATION WITH THE PRESENCE OF Escherichia coli BACTERIES IN REBUS CHICKEN EGGS IN UBUD TOURISM AREA, GIANYAR ABSTRACT Personal hygiene and food sanitation if not met can lead to health problems such as diarrheal diseases caused by Escherichia coli bacteria that enter through food and drink into the digestive tract. One of the foods that are widely consumed is boiled chicken eggs, where chicken eggs can experience a decrease in quality and make microbial growth if the microbes are found in the eggs. The purpose of this study was to determine the relationship between personal hygiene and food sanitation with the presence of Escherichia coli bacteria in boiled chicken eggs in the Ubud tourist area, Gianyar. This research is descriptive analytic with cross-sectional research design. The sample size was 17 of boiled chicken egg sellers with purposive sampling technique. The instruments used were observation, interviews, and laboratory tests. Data analysis using chi square test with α 0.05. The results showed that 4 (23.5%) were positive for Escherichia coli bacteria and 13 (76.5%) were negative for Escherichia coli bacteria according to SNI 2897: 2008. The chi quare test found a relationship between personal hygiene (p: 0.031) and food sanitation (p: 0.000) with the presence of Escherichia coli bacteria in boiled chicken eggs in the tourist area of Ubud, Gianyar. Salah satu makanan yang banyak dikonsumsi yaitu telur ayam rebus yang dimana telur ayam dapat mengalami penurunan kualitas dan menjadikan pertumbuhan mikroba apabila mikroba tersebut didapatkan di dalam telur. Tujuan penelitian ini untuk mengetahui adanya hubungan personal hygiene dan sanitasi makanan dengan keberadaan bakteri Escherichia coli pada telur ayam rebus di kawasan wisata Ubud, Gianyar. Penelitian ini merupakan deskriptif analitik dengan desain penelitian cross-sectional. Besar sampel yaitu 17 sampel penjual telur ayam rebus dengan teknik pengambilan purposive sampling. Instrumen yang digunakan yaitu observasi, wawancara, dan uji laboratorium. Analisis data menggunakan uji chi square dengan α 0,05. Hasil penelitian menunjukkan sebanyak 4 sampel (23,5%) positif bakteri Escherichia coli dan 13 sampel (76,5%) negatif bakteri Escherichia coli sesuai SNI 2897:2008. Uji chi quare didapatkan hasil ada hubungan antara personal hygiene (p:0,031) dan sanitasi makanan (p:0,000) dengan keberaadaan bakteri Escherichia coli pada telur ayam rebus di kawasan wisata Ubud, Gianyar.
