Abstract

Not all types of Escherichia coli are harmful to human health. Infections due to pathogenic Escherichia coli strains are the cause of foodborne illnesses. This study aims to determine the contamination content Escherichia coli and food safety scores on food stalls spread in the city of Denpasar. Sample amounted to 16 food stalls by taking the main menu at the food stall. Bacteriological examination by using MPN (Most Probable Number) method and examination was done by using food security score form (SKP). Food research results at food stalls spread in four sub-districts of Denpasar City showed a positive sample containing coliform as much as 13 (81%) sample with MPN value <3-96 MPN / 100 gram. And as many as 5 (31%) positive samples contain Escherichia coli with 0-27 MPN / 100 gram. Meanwhile, based on the results of the interpretation of food safety score (SKP) it can be seen that as many as 4 samples (25%) of the food included in the good category, 5 samples (32%) included in the category of moderate, and 7 samples (43%) included in the category prone, but safe for consumption. from the results of analysis using spearman correlation test obtained that there is a significant relationship between Food Safety Scores with bacteria escherichia coli. To maintain the quality of food at food stalls to be both bacteriologically hence food traders to always maintain hygiene sanitation and occupational health.
